  • 4 pita breads
  • 60 ml (¼ cup) flour
  • 1 egg
  • 250 ml (1 cup) panko breadcrumbs
  • 60 ml (¼ cup) sesame seeds
  • 60 ml (¼ cup) mayonnaise
  • 60 ml (¼ cup) plain Greek yogurt
  • 15 ml (1 tbsp) harissa (or to taste)
  • 5 ml (1 tsp) honey
  • ¼ green cabbage, finely sliced
  • 2 Québec apples, julienned or thinly sliced
  • 120 ml (½ cup) crumbled feta
  • A few fresh mint leaves
  • A few fresh cilantro leaves
  • Juice of half a lime

  1. Season the chicken cutlets with salt and pepper.
  2. Prepare three bowls: one with flour, one with the beaten egg, and one with panko mixed with sesame seeds.
  3. Coat each piece of chicken in flour, then in egg, and finally in the panko mixture, pressing well so the coating sticks.
  4. Heat a thin layer of vegetable oil in a skillet over medium-high heat.
    Cook the chicken 3 to 4 minutes per side, until golden and crispy.
    Drain on paper towels and lightly salt.
  5. In a bowl, combine the cabbage, apples, cucumbers, cilantro, mint, feta, and lime juice.
  6. In another bowl, mix the mayonnaise, Greek yogurt, harissa, and honey until smooth.
  7. Warm the pita breads slightly. Fill each pita with sauce, crispy chicken, and the apple slaw.
