- 250 ml (1 cup) cooked jasmine rice
- 1 tomato, seeded and diced
- 1 small red onion, finely chopped
- 125 ml (½ cup) corn
- 125 ml (½ cup) shredded cheese
- Jalapeño pepper (optional)
For the ranch sauce
- 60 ml (¼ cup) mayonnaise
- 60 ml (¼ cup) plain Greek yogurt
- 15 ml (1 tbsp) dehydrated onion
- 7.5 ml (½ tbsp) mustard
- 7.5 ml (½ tbsp) parsley
- 7.5 ml (½ tbsp) dill
- 2.5 ml (½ tsp) garlic powder
- 15 to 30 ml (1 to 2 tbsp) water, depending on desired consistency

- Cook the chicken breasts in the air fryer following the package instructions, about 18 to 20 minutes, flipping them halfway through cooking.
- Meanwhile, mix all the ingredients for the ranch sauce in a bowl. Set aside.
- Once the chicken is fully cooked, combine all the ingredients in bowls and top with the ranch sauce.
