Ingredients

  • 250 ml (1 cup) cooked jasmine rice
  • 1 tomato, seeded and diced
  • 1 small red onion, finely chopped
  • 125 ml (½ cup) corn
  • 125 ml (½ cup) shredded cheese
  • Jalapeño pepper (optional)

For the ranch sauce

  • 60 ml (¼ cup) mayonnaise
  • 60 ml (¼ cup) plain Greek yogurt
  • 15 ml (1 tbsp) dehydrated onion
  • 7.5 ml (½ tbsp) mustard
  • 7.5 ml (½ tbsp) parsley
  • 7.5 ml (½ tbsp) dill
  • 2.5 ml (½ tsp) garlic powder
  • 15 to 30 ml (1 to 2 tbsp) water, depending on desired consistency

  1. Cook the chicken breasts in the air fryer following the package instructions, about 18 to 20 minutes, flipping them halfway through cooking.
  2. Meanwhile, mix all the ingredients for the ranch sauce in a bowl. Set aside.
  3. Once the chicken is fully cooked, combine all the ingredients in bowls and top with the ranch sauce.
