- 4 Exceldor chicken breasts, cut into strips
- 30 ml (2 tbsp) paprika
- 5 ml (1 tsp) dried oregano
- 10 ml (2 tsp) cumin
- 5 ml (1 tsp) garlic powder
- 5 ml (1 tsp) chili powder
- 2.5 ml (½ tsp) ground coriander
- 2.5 ml (½ tsp) sugar
- Salt and pepper to taste
- 3 bell peppers of assorted colours, sliced
- 1 yellow onion, sliced
- 15 ml (1 tbsp) canola oil
- 1 lime, juiced
- 250 ml (1 cup) Tex-Mex-style shredded cheese blend
- 8 medium tortillas
For the toppings (to taste)
- Guacamole
- Salsa
- Sour cream
- Lime wedges
- Fresh cilantro
Directions

- Preheat the oven to 205 °C (400 °F).
- In a small bowl, combine the paprika, oregano, cumin, garlic powder, chili powder, ground coriander, sugar, salt and pepper.
- In a large baking dish, combine the chicken, bell peppers, onion, oil and spice mixture. Drizzle with lime juice and toss again.
- Bake for 20 to 25 minutes, stirring halfway through. About 5 minutes before the end of cooking, top with the cheese. Remove from the oven.
- If desired, warm the tortillas in the oven.
- Fill the tortillas with the chicken mixture and your choice of toppings.
