Spicy One Pot Chicken Noodles

Ingredients

  • 1 drizzle of vegetable oil
  • 1 yellow onion, chopped
  • 4 garlic cloves, chopped
  • Salt
  • 2 tbsp. sambal oelek
  • 1 can (400 ml) coconut milk
  • 3 cups of chicken stock
  • 4 portions of rice noodles
  • 1 broccoli, cut into small florets
  • 1 cup of bean sprouts
  • Cilantro, to serve
  • Limes, to serve

Directions

  1. Heat a drizzle of vegetable oil in a large, high-sided pan over medium-high heat. Add onion and garlic, salt, and sambal oelek. Cook until the vegetables are tender.
  2. Add the coconut milk and chicken stock and allow to boil. Reduce heat for the liquid to simmer.
  3. Add the chicken breasts and simmer over medium-low heat until fully cooked, 10 to 12 minutes. Put the cooked chicken in a plate.
  4. Add the rice noodles into the pan and cook for 5 minutes. Meanwhile, shred the chicken into large pieces using two forks. Set aside.
  5. Add the broccoli to the pan and continue cooking for 2-3 minutes, until the noodles are cooked and only a small amount of liquid is left in the pan. Put the chicken back into the pan, add the bean sprouts, mix well, and serve with chopped coriander and lime juice.
