  1. In a skillet, heat oil over medium-high heat and add chicken. Add salt and pepper. Brown chicken on both sides. Set aside on a plate.
  2. Add onions and bell pepper to the same skillet and cook until golden. Set aside.
  3. Preheat oven to 450°F (230°C) and a pizza stone if you have one.
  4. On a floured work surface, roll out dough until 30 cm (12 in.) thick using your hands or a rolling pin.
  5. Spread BBQ sauce on top of dough and garnish evenly, alternating chicken, onion, and bell pepper. Top with cheese.
  6. Place pizza on stone or on a baking sheet lined with parchment paper and bake for 10 to 12 minutes or until cheese and crust are golden brown.
  7. When ready to serve, drizzle olive oil over pizza and garnish with fresh herb salad.
Chef's tip

Spread roasted garlic over pizza crust before adding toppings. Throw on some cubed chorizo sausage for a spicy touch.

Top your pizza with ground chicken that has been mixed and cooked with BBQ sauce, fried onions, garlic, and coriander. Cover with cheese and bake!
