Tex-Mex chicken thighs tacos with strawberry salsa

Ingredients

  • 10 tortillas
  • 30 ml (2 tbsp) cilantro
  • 100 g Feta cheese cut into cubes

Strawberry salsa

  • 1 basket (about 2 cups) diced strawberries
  • 1 avocado cut into cubes
  • 1 green onion, chopped
  • Juice of 1/2 lemon
  • Salt and pepper, to taste
  • 15 ml (1 tbsp) olive oil
  • 15 ml (1 tbsp) maple syrup

Avocado sauce

  • 1 avocado
  • ½ cup Greek yogurt
  • Juice of 1/2 lemon

Directions

  1. Cook the chicken skewers.
  2. In a bowl, combine all the ingredients for the strawberry salsa. Set aside.
  3. Using an electric blender, blend the ingredients for the avocado sauce until smooth and homogeneous. Set aside.
  4. Cut the chicken.
  5. Toast the tortillas in a skillet or on the BBQ.
  6. Top the tacos: Avocado sauce, chicken strips, strawberry salsa, Feta cheese and some cilantro leaves.
