Grilled Chicken Sandwich with Bacon, Avocado and Sun-Dried Tomato Mayo

- 4 slices of bread
- 1 avocado, sliced
- 4 slices bacon
- 2–3 sun-dried tomatoes, chopped
- 1 garlic clove, minced
- A few basil leaves, chopped
- 80 ml (⅓ cup) mayonnaise
- 4 slices Swiss cheese
- A handful of arugula

- On a hot griddle, cook the bacon slices until crispy.
- Grill the chicken breasts at the same time until fully cooked and lightly browned. Set aside and let rest for a few minutes, then slice the chicken.
- In a small bowl, mix the mayonnaise with the chopped sun-dried tomatoes, basil, and garlic.
- Spread the sun-dried tomato mayo on each slice of bread.
- On two slices of bread, layer the arugula, grilled chicken, 2 slices of bacon, 2 slices of Swiss cheese, and the avocado slices.
- Close the sandwiches with the remaining slices of bread.
- Cut the sandwiches in half and serve immediately.
