Ingredients

  • 4 slices of bread
  • 1 avocado, sliced
  • 4 slices bacon
  • 2–3 sun-dried tomatoes, chopped
  • 1 garlic clove, minced
  • A few basil leaves, chopped
  • 80 ml (⅓ cup) mayonnaise
  • 4 slices Swiss cheese
  • A handful of arugula

Directions

  1. On a hot griddle, cook the bacon slices until crispy.
  2. Grill the chicken breasts at the same time until fully cooked and lightly browned. Set aside and let rest for a few minutes, then slice the chicken.
  3. In a small bowl, mix the mayonnaise with the chopped sun-dried tomatoes, basil, and garlic.
  4. Spread the sun-dried tomato mayo on each slice of bread.
  5. On two slices of bread, layer the arugula, grilled chicken, 2 slices of bacon, 2 slices of Swiss cheese, and the avocado slices.
  6. Close the sandwiches with the remaining slices of bread.
  7. Cut the sandwiches in half and serve immediately.
