- 1 baguette (about 6 inches)
- 250 ml (1 cup) cherry tomatoes, diced
- 1 clove fresh garlic, grated
- 30 ml (2 tbsp) fresh basil, chopped
- 30 ml (2 tbsp) extra virgin olive oil
- Salt and pepper, to taste
- 1 ball of burrata
- A drizzle of balsamic reduction
Homemade basil mayonnaise
- 45 ml (3 tbsp) mayonnaise
- 1 small clove garlic, grated
- 30 ml (2 tbsp) fresh basil, chopped
- 5 ml (1 tsp) honey
- 5 ml (1 tsp) lemon juice
- Black pepper, to taste

- Preheat the air fryer to 375°F and the oven to 400°F for the bread.
- Cook the crispy and spicy chicken breasts for 18–20 minutes, turning halfway through. Oven option: 400°F for 30–35 minutes.
- In a bowl, combine the cherry tomatoes, grated garlic, basil, olive oil, salt, and pepper. Set aside.
- Tear the burrata by hand to achieve a creamy, spreadable texture.
- In a tall container, blend the basil mayonnaise ingredients with a hand blender until smooth and homogeneous.
- Cut the baguette into a 6-inch piece.
- Warm the bread in the oven for 5–6 minutes, until the outside is slightly crispy. Split the bread in half after removing from the oven.
- For assembly, generously spread the basil mayonnaise on the base of the bread, add the crispy Exceldor chicken, creamy burrata, a good spoonful of bruschetta tomatoes on top, and finish with a drizzle of balsamic reduction.
