- Arugula (to taste)
- 180 ml (3/4 cup) couscous
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 80 ml (1/3 cup) crumbled feta
- 60 ml (1/4 cup) nutritional yeast
- 45 ml (3 tbsp) hemp seeds
- 60 ml (4 tbsp) lemon juice
- 45 ml (3 tbsp) spicy honey
- Salt and pepper
- Chili flakes (optional)

- Place the chicken breasts in the air fryer and cook at 375°F for about 15 minutes, or until fully cooked.
- Cook the couscous according to the package instructions. Let cool.
- In a large bowl, combine the cooked couscous with the cucumber, red onion, feta, nutritional yeast, hemp seeds, lemon juice, honey, salt and pepper.
- Place a bed of arugula in a bowl. Add the couscous mixture on top, then place the sliced chicken breasts over it.
- Add chili flakes if desired for an extra spicy kick.
