  • Arugula (to taste)
  • 180 ml (3/4 cup) couscous
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 80 ml (1/3 cup) crumbled feta
  • 60 ml (1/4 cup) nutritional yeast
  • 45 ml (3 tbsp) hemp seeds
  • 60 ml (4 tbsp) lemon juice
  • 45 ml (3 tbsp) spicy honey
  • Salt and pepper
  • Chili flakes (optional)

Directions

  1. Place the chicken breasts in the air fryer and cook at 375°F for about 15 minutes, or until fully cooked.
  2. Cook the couscous according to the package instructions. Let cool.
  3. In a large bowl, combine the cooked couscous with the cucumber, red onion, feta, nutritional yeast, hemp seeds, lemon juice, honey, salt and pepper.
  4. Place a bed of arugula in a bowl. Add the couscous mixture on top, then place the sliced chicken breasts over it.
  5. Add chili flakes if desired for an extra spicy kick.
