- 15 ml (1 tablespoon) canola oil
- 2 medium sweet potatoes, peeled and cubed
- 2 liters (8 cups) kale, coarsely chopped
- 1/2 small red onion, thinly sliced
- 6 slices of bacon, cooked and cut into pieces
- 1, 113-gram goat cheese, crumbled
- 4 hard-boiled eggs, cut in half
For the dressing
- 60 ml (1/4 cup) mayonnaise
- 30 ml (2 tablespoons) apple cider vinegar
- 15 ml (1 tablespoon) Dijon mustard
- 15 ml (1 tablespoon) honey
- 15 ml (1 tablespoon) chopped fresh chives
- Salt and pepper to taste

- Preheat the oven to 205 °C (400 °F).
- In a large skillet, heat the oil over medium-high heat. Brown the chicken breasts for 2 to 3 minutes on each side.
- Place the chicken breasts on one side of a large baking sheet lined with parchment paper. Place the sweet potato cubes on the other side.
- Bake for 22 to 25 minutes, stirring the sweet potatoes halfway through cooking. Remove from the oven and let cool slightly.
- Meanwhile, combine the dressing ingredients in a large bowl. Add the cabbage and toss. Let the cabbage soften for 15 minutes.
- Add the sweet potatoes, onion, bacon, and goat cheese to the bowl. Toss to combine. Divide the salad among four bowls.
- On a cutting board, slice the chicken into thin strips.
- Top the salad with the chicken strips and eggs.
