Ingredients

  • 15 ml (1 tablespoon) canola oil
  • 2 medium sweet potatoes, peeled and cubed
  • 2 liters (8 cups) kale, coarsely chopped
  • 1/2 small red onion, thinly sliced
  • 6 slices of bacon, cooked and cut into pieces
  • 1, 113-gram goat cheese, crumbled
  • 4 hard-boiled eggs, cut in half

For the dressing

  • 60 ml (1/4 cup) mayonnaise
  • 30 ml (2 tablespoons) apple cider vinegar
  • 15 ml (1 tablespoon) Dijon mustard
  • 15 ml (1 tablespoon) honey
  • 15 ml (1 tablespoon) chopped fresh chives
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 205 °C (400 °F).
  2. In a large skillet, heat the oil over medium-high heat. Brown the chicken breasts for 2 to 3 minutes on each side.
  3. Place the chicken breasts on one side of a large baking sheet lined with parchment paper. Place the sweet potato cubes on the other side.
  4. Bake for 22 to 25 minutes, stirring the sweet potatoes halfway through cooking. Remove from the oven and let cool slightly.
  5. Meanwhile, combine the dressing ingredients in a large bowl. Add the cabbage and toss. Let the cabbage soften for 15 minutes.
  6. Add the sweet potatoes, onion, bacon, and goat cheese to the bowl. Toss to combine. Divide the salad among four bowls.
  7. On a cutting board, slice the chicken into thin strips.
  8. Top the salad with the chicken strips and eggs.
