Italian Chicken Sandwich Filling

Ingredients

  • 15 ml (1 tbsp) olive oil
  • 8 salami slices, chopped
  • 1 Italian tomato, seeded and finely diced
  • ½ small red onion, finely chopped
  • 60 ml (¼ cup) roasted red peppers, chopped
  • 80 ml (⅓ cup) crumbled feta cheese
  • 60 ml (¼ cup) mayonnaise
  • 30 ml (2 tbsp) Italian dressing
  • 15 ml (1 tbsp) Dijon mustard
  • 2.5 ml (½ tsp) dried oregano
  • Salt and pepper, to taste

  1. Preheat the oven to 400°F (205°C).
  2. Season the chicken breasts with salt and pepper.
  3. Heat the oil in a large oven-safe skillet over medium heat. Sear the chicken for 2–3 minutes per side, until browned.
  4. Continue cooking in the oven for 15–18 minutes, or until the chicken is no longer pink inside.
  5. Remove from the oven and transfer
    the chicken to a plate. Let rest for 5 minutes, then shred using two forks.
  6. In a bowl,
    mix the shredded chicken with the salami, tomato, onion, roasted red peppers, and feta cheese.
  7. Add the mayonnaise, vinaigrette, Dijon mustard, and oregano. Season with pepper and stir.
  8. Serve on crusty bread, in a sandwich or wrap, or with crackers.
