- 15 ml (1 tbsp) olive oil
- 8 salami slices, chopped
- 1 Italian tomato, seeded and finely diced
- ½ small red onion, finely chopped
- 60 ml (¼ cup) roasted red peppers, chopped
- 80 ml (⅓ cup) crumbled feta cheese
- 60 ml (¼ cup) mayonnaise
- 30 ml (2 tbsp) Italian dressing
- 15 ml (1 tbsp) Dijon mustard
- 2.5 ml (½ tsp) dried oregano
Salt and pepper, to taste

- Preheat the oven to 400°F (205°C).
- Season the chicken breasts with salt and pepper.
- Heat the oil in a large oven-safe skillet over medium heat. Sear the chicken for 2–3 minutes per side, until browned.
- Continue cooking in the oven for 15–18 minutes, or until the chicken is no longer pink inside.
- Remove from the oven and transfer
the chicken to a plate. Let rest for 5 minutes, then shred using two forks. - In a bowl,
mix the shredded chicken with the salami, tomato, onion, roasted red peppers, and feta cheese. - Add the mayonnaise, vinaigrette, Dijon mustard, and oregano. Season with pepper and stir.
- Serve on crusty bread, in a sandwich or wrap, or with crackers.
