Spicy Breaded Chicken on Savory Cheddar Waffles

Ingredients
- 60 mL (1/4 cup) honey
- 5 mL (1 tsp) chili flakes
- 4 green onions
- 60 mL (1/4 cup) arugula
Savory Cheddar Waffle Batter
- 250 mL (1 cup) all-purpose flour
- 10 mL (2 tsp) baking powder
- 2.5 mL (1/2 tsp) salt
- 2 eggs
- 250 mL (1 cup) milk
- 60 mL (1/4 cup) melted butter
- 125 mL (1/2 cup) grated sharp cheddar cheese
- 60 mL (1/4 cup) chopped green onions
Directions

- Cook the chicken breasts according to the package instructions.
- Meanwhile, preheat the waffle iron as directed by the manufacturer.
- In a bowl, combine the flour, baking powder, and salt.
- In another bowl, whisk the eggs with the milk and melted butter.
- Add the dry ingredients to the wet ingredients. Add the cheddar cheese and chopped green onions. Stir until the batter is smooth. Let stand for 5 minutes.
- Spoon about 15 mL (1 tbsp) of waffle batter into each section of the waffle iron. Cook for 3 to 4 minutes, until the waffles are golden and crispy. Repeat with the remaining batter to make 32 mini waffles.
- In a small saucepan, combine the honey and chili flakes. Heat for 1 minute over low heat. Remove from heat and set aside.
- Cut the green parts of the green onions into 5 cm (2 in.) pieces. Slice lengthwise into ribbons and place them in ice water. Set aside to curl.
- Cut each chicken breast into eight pieces.
- Top the waffles with arugula, chicken pieces, spiced honey, and green onion ribbons.
Notes
- If you don't have a waffle iron, you can use store-bought waffles that you cut into smaller pieces.
