Spicy Breaded Chicken on Savory Cheddar Waffles

Ingredients

  • 60 mL (1/4 cup) honey 
  • 5 mL (1 tsp) chili flakes 
  • 4 green onions 
  • 60 mL (1/4 cup) arugula 

Savory Cheddar Waffle  Batter

  • 250 mL (1 cup) all-purpose flour 
  • 10 mL (2 tsp) baking powder 
  • 2.5 mL (1/2 tsp) salt 
  • 2 eggs 
  • 250 mL (1 cup) milk 
  • 60 mL (1/4 cup) melted butter 
  • 125 mL (1/2 cup) grated sharp cheddar cheese 
  • 60 mL (1/4 cup) chopped green onions 

Directions

  1. Cook the chicken breasts according to the package instructions.  
  2. Meanwhile, preheat the waffle iron as directed by the manufacturer.  
  3. In a bowl, combine the flour, baking powder, and salt.  
  4. In another bowl, whisk the eggs with the milk and melted butter.  
  5. Add the dry ingredients to the wet ingredients. Add the cheddar cheese and chopped green onions. Stir until the batter is smooth. Let stand for 5 minutes.  
  6. Spoon about 15 mL (1 tbsp) of waffle batter into each section of the waffle iron. Cook for 3 to 4 minutes, until the waffles are golden and crispy. Repeat with the remaining batter to make 32 mini waffles.  
  7. In a small saucepan, combine the honey and chili flakes. Heat for 1 minute over low heat. Remove from heat and set aside.  
  8. Cut the green parts of the green onions into 5 cm (2 in.) pieces. Slice lengthwise into ribbons and place them in ice water. Set aside to curl.  
  9. Cut each chicken breast into eight pieces.  
  10. Top the waffles with arugula, chicken pieces, spiced honey, and green onion ribbons. 

Notes

  • If you don't have a waffle iron, you can use store-bought waffles that you cut into smaller pieces.
