Chicken pizza with burratini cheese

Ingredients

  • 2 Exceldor chicken breasts
  • 1 x 450 g (1 lb) pizza dough ball
  • 125 ml (1/2 cup) four cheese sauce
  • 1 burratini 125 g, broken into pieces
  • 60 ml (1/4 cup) Basil pesto
  • 8 to 12 fresh basil leaves
  • 15 ml (1 tbsp) balsamic glaze

For the marinade

  • 30 ml (2 tbsp) olive oil
  • 30 ml (2 tbsp) sun-dried tomato pesto
  • 15 ml (1 tbsp) chopped fresh thyme
  • 1.25 ml (1/4 tsp) chili flakes
  • Salt to taste

  1. Cut the chicken breasts into thin slices.
  2. In a bowl, combine the ingredients for the marinade. Add the chicken and stir to coat with the marinade. Cover and marinate for 1 to 2 hours in a cool place.
  3. At the moment of cooking, preheat the oven to 450 °F (230 °C).
  4. Drain the chicken and place on a baking tray lined with parchment paper.
  5. Cook in the oven for 5 to 6 minutes, until the inside of the chicken meat is no longer pink. Remove from the oven.
  6. On a lightly floured work surface, stretch the pizza dough into a 30 cm (12 in) circle.
  7. Place the dough on a pizza tray. Coat the pastry with the four cheese sauce, leaving a small edge free. Top with the chicken and drizzle with the pesto.
  8. Bake for 12 to 15 minutes.
  9. Remove from the oven and garnish with pieces of burratini and basil. Drizzle with balsamic glaze.
