MINI TURKEY KEFTA SKEWERS WITH YOGURT-MINT SAUCE

Ingredients

1 lb. (454 g) Exceldor lean ground turkey On sale
  • 1 cup (250 ml) onion, grated
  • 1/4 tsp. (1.25 ml) cayenne pepper
  • 1/4 tsp. (1.25 ml) ground coriander
  • 1 tsp. (5 ml) ground cumin
  • 1 tsp. (5 ml) paprika
  • 1 tsp. (5 ml) ground cinnamon
  • 1/2 tsp. (3 ml) ground black pepper
  • 1/2 tsp. (3 ml) salt
  • 2 tbsp. (30 ml) fresh cilantro, chopped
  • 3 cloves garlic, chopped

YOGURT-MINT SAUCE

  • 1 cup (250 ml) plain Greek-style yogurt
  • 3 tbsp. (45 ml) fresh mint, minced
  • 2 tbsp. (30 ml) fresh cilantro, minced
  • 1 clove garlic, pressed
  • Salt and pepper

Directions

  1. Mix ingredients in large bowl and shape mixture into 3-cm balls. Place 3 balls on each bamboo skewer.
  2. Sear skewers in a non-stick grill pan (or broil in oven), turning skewers often, for about 10 minutes.
  3. Mix all Yogurt-Mint sauce ingredients and serve with skewers.
