- 300 g gnocchi
- 180 mL (¾ cup) cottage cheese
- 15 mL (1 tbsp) Dijon mustard
- 250 mL (1 cup) cherry tomatoes
- 2 green zucchini, cut into quarters
- 1 yellow onion, minced
- 15 mL (1 tbsp) minced garlic
- 2 green onions, thinly sliced
- 60 mL (¼ cup) grated Parmesan cheese
- Sriracha, to taste (optional)
- Salt and pepper, to taste

- Cook the Exceldor Dijon Mustard Chicken Breasts in the air fryer at 400°F (205°C) for about 15 minutes, or until fully cooked. Let rest for a few minutes, then slice.
- Meanwhile, sauté the onion and garlic in a skillet. Add the cherry tomatoes and cook until they begin to soften. Transfer the tomato, onion, and garlic mixture to a blender with the cottage cheese and Dijon mustard. Add Sriracha, if desired, and blend until smooth and creamy.
- Sauté the zucchini in a skillet until lightly browned.
- Cook the gnocchi according to the package directions, then add them to the creamy sauce along with the zucchini. Toss to combine.
- Divide the gnocchi among serving plates and top with the sliced chicken breasts.
- Garnish with Parmesan cheese and green onions.
