CHICKEN BURGERS
- 1 tray of Exceldor ground chicken
- 2 tbsp. (30 ml) olive oil
- 8 slices pancetta, cooked
- Salt and pepper
- 4 Kaiser rolls
- 4 romaine lettuce leaves
CEASAR-STYLE MAYONNAISE
- 1/4 cup (60 ml) homemade or store-bought mayonnaise
- 2 tbsp. (30 ml) grated parmesan
- 1 tsp. (5 ml) capers
- 1 small glove garlic, chopped
- 1 anchovy filet, chopped
- Juice of 1/2 lemon
- Salt and pepper

- Combine all mayonnaise ingredients in a bowl. Set aside.
- Heat oil in a skillet and brown chicken patties.
- Continue cooking in oven for 10 minutes at 350°F (180°C).
- Garnished with Caesar-style mayonnaise, pancetta, and lettuce.
- Use this mayonnaise in grilled chicken salad.
