Caesar’s BBQ Chicken Kebabs

Ingredients

  • ¾ cup grated Parmesan cheese
  • 4 slices bacon
  • ¾ cup store-bought Caesar’s salad dressing
  • Caesar’s salad croutons
  • Olive oil
  • Romaine lettuce
  • 2 lemons

Marinade

  • ¼ cup olive oil
  • Juice of half a lemon
  • 2 garlic cloves, chopped
  • 1 tbsp. maple syrup
  • 1 tsp. Dijon mustard
  • Salt and pepper to taste
  • Some fresh parsley, chopped (optional)

Directions

  1. Prepare the marinade with the ingredients above and add the pieces of chicken to coat them. Refrigerate for at least 30 minutes (optional).
  2. Meanwhile, cut one lemon into pieces to insert between the pieces of chicken on skewers. Crush the croutons, and cook the slices of bacon in the microwave for about 5 minutes or until crisp. Then chop the bacon finely.
  3. Once the chicken has marinated, cut the pieces in halves lengthways and then into quarters widthwise.
  4. In a bowl, mix the pieces of chicken with some Caesar’s salad dressing and about ¼ cup grated Parmesan cheese. Prepare the skewers by sliding on each two pieces of chicken, one piece of lemon, and so on.
  5. Coat the barbecue grill with some oil and cook the kebabs at 400°F for about 18 minutes. Brush the kebabs with Caesar's salad dressing from time to time, as you turn them over.
  6. Combine the bacon, croutons and some grated Parmesan cheese on a plate. Once the kebabs are cooked (the chicken should be white inside, with no trace of pink left).
  7. To prepare the cooked kebabs, use a clean brush to brush them with more Caesar’s salad dressing, then roll them in the mixture of bacon, croutons and Parmesan cheese. Serve on romaine lettuce leaves with some Caesar's salad dressing on the side for dipping.
