Lemon Chicken Skewers with Garlic Yogurt Sauce

Ingredients

Chicken Skewers

  • 5–6 garlic cloves, minced
  • ¼ cup olive oil
  • Juice and zest of ½ lemon
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tsp salt
  • 1 ½ tsp ground cumin
  • ½ tsp ground turmeric

Garlic Yogurt Sauce

  • 1 cup plain Greek yogurt
  • Juice of ½ lemon
  • 1-2 garlic clove, minced
  • Salt and pepper, to taste

For serving

  • 6-8 Greek-style pita breads
  • Sliced red onions or pickled onions
  • Sliced tomatoes
  • Ribboned mini cucumbers
  • Lettuce

Directions

  1. In a large bowl, mix the 1-inch chicken cubes with 5–6 minced garlic cloves, ¼ cup olive oil, the juice and zest of ½ lemon, 1 tbsp Dijon mustard, 1 tbsp honey, 1 tsp salt, 1 ½ tsp ground cumin, and ½ tsp ground turmeric. Toss well to coat the chicken evenly. Ideally, marinate in the fridge for 30 minutes, or up to 12 hours if prepping ahead.
  2. Thread the marinated chicken onto approximately 8 skewers (wooden or metal). If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
  3. Preheat the BBQ to medium-high heat. Grill the skewers for 10 to 12 minutes, turning them every 2 to 3 minutes to ensure even cooking.
  4. Prepare the garlic yogurt sauce: in a bowl, combine 1 cup Greek yogurt, the juice and zest of ½ lemon, and 1 minced garlic clove. Season with salt and pepper to taste, and adjust as needed.
  5. To assemble, serve the grilled chicken in warm pita bread with garlic yogurt sauce, sliced tomatoes, cucumber ribbons, red onions, and lettuce.
