Oven: Preheat oven to 400 °F (200 °C). Place skewers on a lightly oiled baking sheet. Cook for 15 to 20 minutes.
BBQ: Brush the cool barbecue grill with vegetable oil. Preheat barbecue to medium. Cook for 15 to 20 minutes. Turn skewers once or twice during cooking. Cook until chicken reaches an internal temperature of 165 °F (74 °C).
Grilled zucchini, green onion and herb salsa
In a pan or on the barbecue, grill the zucchinis at high intensity to create visible marks. Remove and cut in brunoise. Add the remaining ingredients and season.
Smoked paprika potato fries
Oven: Preheat oven to 350 °F (180 °C). Mix potatoes with the other ingredients. Spread the potatoes on a baking sheet lined with parchment paper. Bake for approximately 30 minutes or until they are golden and crispy, turning them halfway.
BBQ: Place in foil wrap and close to seal. Cook indirectly on the grill.
For the feta croutons, preheat oil to 350°F (180°C). Coat with flour, then dip in beaten eggs and coat with breadcrumbs. Fry until golden and reserve on a paper towel to remove excess fat.
In a large bowl, mix all ingredients and season. Garnish croutons with feta.
