Turkey with quinoa, caramelized apple, and cranberry stuffing

  1. Preheat oven to 350°F (175°C).
  2. Place quinoa in a sieve and rinse, then transfer to a saucepan.
  3. Add water and cranberries and cook 15 to 20 minutes until quinoa is well cooked.
  4. Meanwhile, sauté onion in olive oil until tender, then add herbs and spices. Set aside.
  5. In the same skillet, caramelize apple slices in butter and maple syrup for a few minutes.
  6. Once the quinoa is cooked, add onions and apples to mixture. Combine all ingredients thoroughly.
  7. Taste and adjust seasoning as needed.
  8. Stuff turkey and bake for 3½ to 4 hours.
Chef's tip

Adjust the stuffing recipe to the size of your turkey. Increase ingredient amounts proportionally if you have a big turkey, or reduce the amounts if your turkey is smaller. Remember to check on your turkey from time to time while it’s in the oven to make sure it comes out tender and juicy.
