Dijon mustard chicken breasts with citrus salad

  1. Place oven rack in middle position. Preheat oven to 350°F (180°C).
  2. Heat oil in a skillet and brown chicken. Continue cooking in oven for about 10 minutes until chicken is fully cooked (internal temperature of 170°F/77°C). Slice and set aside.
  3. Combine all salad ingredients in a large bowl. Set aside.
  4. Whisk all dressing ingredients together in a bowl.
  5. Toss dressing with salad. Add salt and pepper. Divide onto plates and top with Dijon mustard chicken.
Chef's tip

Serve this chicken grilled with a white wine and whole-grain mustard sauce, garnished with tarragon.
