Salad

In a bowl, mix all salad ingredients and set aside 15 minutes.

Chicken

  1. Preheat oven to 425°F (220°C). Heat olive oil in a large non-stick skillet on high and grill marinated chicken breasts for about 4 minutes per side.
  2. Transfer chicken breasts to a baking sheet and bake in oven for another 10 minutes or until cooked all the way through.
  3. Serve grilled chicken breasts with cucumber mango salad, lime wedges, and basmati rice.
