Arugula salad with cold chicken, shaved Parmesan and pine nuts

Ingredients:

- arugula or your choice of lettuce
- 2 cooked Exceldor chicken breasts, cut into cubes
- 4 slices of bacon (optional)
- 2 mandarins or a small can of mandarins
- 4-8 tsp. pine nuts
- 16-20 Parmesan shavings

Vinaigrette
- 125 ml (1/2 cup) extra-virgin olive oil
- 2 tbsp. honey
- 4 tbsp. balsamic vinegar or orange juice
- 1/2 clove of garlic, minced


Preparation:

1. Wash the lettuce and tear it up coarsely; place in a bowl.

2. Cut the bacon into small pieces; sauté slowly in a skillet until crisp; drain and place on paper towel.

3. Color the pine nuts lightly in the bacon fat; drain. If you’re not using bacon in your recipe, you can toast the pine nuts in an ungreased non-stick pan.

4. Prepare the vinaigrette by combining all the ingredients. 

5. Serve the lettuce with the vinaigrette, chicken cubes, mandarin segments, bacon bits, pine nuts and Parmesan shavings
