Frozen Turkey
Suggested cooking method
‘Cook from Frozen’ Exceldor turkey is specially designed to give the best results when you cook it directly from the frozen state. To ensure that you get a perfectly roasted turkey, the cooking thermometer plays a critical role.
Covered roasting pan: The use of a covered enamelled steel roasting pan is recommended. Using a thick stainless steel or aluminum roasting pan will increase cooking time from 2 to 5 hours.
Preheat the oven to 350°F (177°C).
Remove the turkey from the bag and place it in the roasting pan. The plastic leg tie is specially designed for oven cooking.
With the lid on, put the roasting pan in the oven.
After three hours of cooking, insert the cooking thermometer deeply between thigh and breast, in the meatiest part of the thigh. It must not touch the bone.
Continue cooking until the thermometer reaches 180°F (82°C). Refer to the table for approximate cooking times. Remove the lid for the last 30 minutes if you wish to brown skin.
Let the turkey sit for 15 minutes before carving.
Uncovered roasting pan: Follow the instructions for cooking in a covered roasting pan above, but with the following restriction: use only an uncovered roasting pan with a rim or tray to collect the juices. Cooking time will be increased by 30 minutes to one hour. Covering the turkey loosely with aluminum paper is recommended.

Frequently Asked Questions
-
Q
: Can I add stuffing to a "cook from frozen" seasoned Exceldor turkey?
A : Yes, but in this case, you will need to defrost
the turkey ahead of time. It is important to carefully
follow the instructions. Be sure to follow recommended roasting times indicated
for stuffed turkey.
-
Q
: What type of deep roaster should I use to cook a "cook from frozen"
turkey?
A : A covered enamelled steel deep-sided pan. The use
of a disposable aluminum roaster or of a thick stainless steel roaster will lengthen
cooking time by 2 to 5 hours.
-
Q
: The broth obtained from cooking a "cook from frozen" turkey is much
too salty, should I throw it away?
A : No, you should not. As a matter of fact, the normal
cooking process causes broth to become more and more concentrated since evaporation
takes place at that time. The more the broth is concentrated, the saltier it gets.
You can use it as a concentrated broth (Bovril style, only much better!); or filtered
through a colandor and diluted with water to make an excellent base for a soup,
or used in small quantities to enhance the taste of a recipe requiring the addition
of chicken broth. You can also freeze it in small portions (¼ to ½ cup) for further
uses.
-
Q
: I have defrosted my "Cook from Frozen" turkey - can it still be cooked?
R : Yes, you may cook it as long as you have followed
the recommended method for defrosting.
You must then follow one of the cooking methods for a defrosted turkey outlined
under this link.
-
